Inside Out: A Bacterium’s View of Food
What microorganisms are in foods? Should they be in foods? There will be a visual presentation and a discussion of the role of bacteria in foods, including important economic aspects of food microbiology. Topics will include, but are not limited to, food fermentations (bread, summer sausage, beer, etc.), food spoilage, and foodborne disease.
